Traditional pipian sauce
Very simple to use
– Dissolve in a pan the powder with water or chicken broth
– Pour into a pre heated cooking oil and move continuously to prevent sticking
– Once boiling add the mole sauce into meat balls or any poultry (already cooked)
Recommended to serve with rice on the side
Pipian mole is made from ground squash seeds. Even though you would think that it does there is no chocolate in the sauce. The general ingredients are tomatillos, hoja santa, chili peppers, garlic and onion that give it a green color. There is also a red version which combines the peanuts with squash seeds s, red jalapeños or chipotle and sesame seeds. Like other moles, it is cooked with broth and then served with poultry and pork, and sometimes with fish or vegetables.
