Mexican Nachos are a popular food based on corn, of Mexican origin that can be either made quickly to serve as a snack or prepared with more ingredients to make a full meal. In their simplest form, nachos are tortilla chips (totopos) that you can cover in nacho cheese or melted shredded cheese, or tortilla chips with a serving of salsa dip to the side. First created circa 1943 by Ignacio “Nacho” Anaya, the original nachos consisted of fried corn tortillas covered with melted cheddar cheese and sliced jalapeño peppers. Mexican nachos are made by baking them in an over for a truly authentic Mexican nacho crunch. Mexican Nachos may have originated in the city of Piedras Negras, Coahuila, Mexico, just over the border from Eagle Pass, Texas. They are best stored in a cool dark cupboard and left sealed to keep them as fresh as can be.
